Malaysian Laksa Curry with Tofu

This is probably the only recipe that I perfected in the very first try and I felt really happy with the result!




This recipe takes a bit of time- from the prep to the actual cooking- but trust me, the results will be amazing. I devised this recipe from tonnes of online stuff I read and my own experience of trying laksa curry at various places in London. My food stories are quite short (my travel stories are pretty descriptive though: Hiking the Seven Sisters is one of them ;) as I always feel that my readers want to get to the recipe when they are looking for one! And I totally agree with them!

So this is a very straightforward version of the Laksa Curry.. Here you go!

The paste: onion 1, garlic 4-5 pods,ginger small piece, red chilli soaked in boiling water, lemon zest, lemon juice 1/4th, sriracha sauce, oil, salt

Prepare veg: carrot, squash, zucchini, mushroom, dice these in big bites, you dont want them mushy. Also dice tofu( don't use silken tofu, as you want the tofu to soak in the curry). 

On one side, prepare broth (either boil chicken in it (and take it out or use veg broth cubes). When water starts boiling, add noodles to the same broth (why cook noodles separately when you can cook them in the broth)

On the other side, heat oil on a flat pan and fry diced tofu in it. Once tofu turns golden take it out and keep the oil. Ignore this step if you are using chicken in your curry.

Now the final part:cooking it together. Keep the oil in the pan and if needed add more. Heat it nicely, add paste and keep cooking it till the paste leaves oil.
Add the broth to it and let it simmer well. Add a bit of salt/ in the end also fine. 

Add the squash, cover the pan and let the squash soften.
After about 5-7mins,add the rest of your veggies all together and chicken also. 

Let the broth simmer. Finally add coconut milk- i used half of 450 ml tin for a laksa curry for 2-3 persons.

Give it a boil. Check salt.

Now in a bowl put noodles and fried tofu. Pour a few ladles of the curry over them. Add a few sprigs of coriander and sliced cucumber. You can also add chopped thai red chilli 🌶, and a small quarter of lemon.


Now enjoy your meal with chopsticks and a soup spoon 😃
