Chilli Soy Nuggets Stir Fry with Masala Maggi





After over 2 weeks of cooking "proper" food (thanks coronavirus), we finally opened 2 packets of our precious batch of Maggi noodles... And I made my mom's recipe of chilli soy nuggets stir fry... 

Recipe for the super quick and easy soy nuggets stir fry:

Ingredients:
- Dehydrated soy nuggets/nutrela (a couple of handfuls should do (I eat nutrela like there's no tomorrow!) - boil them in water, drain the water, keep them aside
-Thinly slice an onion and a few green chillis (in slants, it goes with the whole "Asian" look)
-Dark soy sauce... A few teaspoons for a couple of handfuls of soy nuggets (light soy should do too but I've somehow never been able to get the perfect flavour)
- whole red chilli (1-2 tiny ones)
- Cooking oil, salt, crushed black pepper, sugar (to balance the taste, if needed).

Now, the steps for cooking it:
Heat oil in a non stick pan, break the whole red chilli into two and add it to the oil, letting the spiciness ooze into the oil.
Add the sliced onion and the green chilli and saute it for a bit until the onion softens (keep the flame on med-high so as to not let the onion sweat).
Add the soy nuggets and toss them well with the onions and chillies. Add soy sauce, a bit of salt (dark soy already contains salt) and crushed black pepper and toss it again (on a high flame) so that the soy gets coated on the nutri nuggets.



*Don't toss the soy nuggets too much as they are already cooked and you don't want them to lose all the moisture by tossing them on a high flame or they'll turn dry.
*You can also add some red/yellow bellpeppers to add some colour to your dish. Just slice them lengthwise in slants (remember the Asian look 😋) and throw them in before adding the soy nuggets.

You may have to increase your quantity of soy though to compensate for the extra veggies! *If you've got some finally chopped spring onions, throw them in as garnish and pair this with fried rice or as I do, with Maggi ;)
