Quick Lunch Rava Dosa
So this is a really quick Rava Dosa I made for myself and for the hungry better half yesterday between work meetings..
The recipe is from my MIL, who makes delicious dosas... If you are looking to eat something different from the usual desi fare of roti-sabzi (that's what I cook usually), then this is a perfect change from it..
All you need to have is this:
Rava - 1 cup
Rice flour - 1 cup
Yoghurt/Dahi - 1 cup
Chopped onion - 1 medium
Grated carrot - 1 medium
Chopped chillied - 3-4
Cumin seeds - 2tsp
Black pepper whole - 6-8
Cashewnuts broken - 10-12
Oil/ghee for cooking the dosa
Water for the batter
Salt and sugar to taste
Start by mixing the rava with the yoghurt. If you have a few hours, soak the rava in the yoghurt as it tastes better. But since I didn't have any time, this was pretty much instant. Mix this mixture well. Add the rice flour and mix it well, removing any lumps.
To this thick batter, add water or buttermilk to thin it down.
Now add all the ingredients except the grated carrot and the oil and mix them well. Check salt and sugar for taste. The batter should be thinner than your normal dosa batter, almost watery.
Heat a tawa well. When it's hot add a big spoonful of the batter to the tawa from the centre and let it spread on the tawa itself because of the thinness of the mixture. Don't play around with it! Or try to spread it, just let it be! If you do it the right way, you will notice that your dosa has holes in it, it means that the batter consistency is correct.
Add some oil or ghee over the dosa. Be patient and let it cook till you start seeing a golden colour on the other side of the dosa. Rava dosa takes longer to cook than normal dosa.
Be gently and start removing the dosa from all sides. Add the grated carrot in the centre and fold the dosa in half. Do not cook the exposed side of the dosa as this is not needed.
Transfer it to a plate and enjoy it with chutney pudi, just like I did! :) if you have time, try it with coconut chutney, it tastes heavenly!! :)
